You need

  • 125 g semolina
  • 500 ml milk
  • 8 eggs
  • orange and lemon peel
  • 1 vanilla pod
  • 100 g sugar



Bring milk with vanilla, lemon and orange peel to the boil once and remove from the heat.

Add the semolina and let it swell.

Whisk the cooled mixture with eggs and fry in a pan with clarified butter.

Finally caramelise with sugar and serve.
